We have a favorite Italian restaurant that our friends own that is absolutely amazing. They offer a pizza called the “Thinny Thin”. I decided to play around with that concept one day and came up with this. It’s not really pizza, but it’s really good.
1 c. cooked hash browns
1/4 c. shredded mozzarella cheese
Vegetable or olive oil
Heat the oil over medium-high heat in a frying pan. Spread the hash browns out in a thin layer, in a circle. Sprinkle the cheese over top. Fry until the cheese is very crispy. Don’t be afraid for it to fry. It is supposed to. If desired, you can flip the “pizza” briefly for extra crisp.
This is not necessarily low-fat, but it is gluten-free, simple, quick and extremely yummy.
