Skinny Garlic “Bread”

This recipe is fast and amazingly simple. It can be used instead of bread as a side for pasta or as a quick and yummy snack. Double, triple, quadruple as you wish. The trick is to use very, very little cheese as it will melt right in to the tortilla. Feel free to add to or adjust any flavors. Remember, flavor is the key.

1 tortilla

1 Tbsp olive oil

Pinch of salt

Minced garlic or garlic powder (to taste)

Pinch of onion powder

Handful of shredded mozzarella cheese

In a small bowl, whisk the olive oil with a pinch of salt, garlic powder and onion powder. Spread a very thin layer of the seasoned oil across the tortilla, getting all the way to the edges. Sprinkle a very thin layer of shredded mozzarella cheese across the tortilla. The cheese does not need to cover the tortilla. It will spread as it melts.

Place the tortilla in a toaster oven on bake and watch carefully. It will begin to bubble up as it bakes and usually is ready within a couple of minutes. It is done when it has bubbled and browned. Take it out to cool slightly and break into several large pieces.

Enjoy warm or cooled. Can be reheated.
