Skinny Hot “Focaccia”

This is not made out of real focaccia, but you will swear you are eating the most delicious hot fried sandwich in the world. It’s packed full of nutrients, fiber and amino acids. But be careful, it is extremely addictive!

1 Whole wheat pocket pita

2 Slices cheese of your choice

1 Bag fresh spinach

Olive oil

Pour a small amount of olive oil in a frying pan and warm over medium heat. Cut the pita in half. Tear the cheese slices in half and place one half in bottom of each pita. Quickly saute the spinach until just wilted. Stuff the pitas with the spinach. Slide the remaining cheese halves into top half of pita. Place the pita in the frying pan and fry until crisp on each side. The sandwich will be crispy, cheesy and oozing with flavor. Just remember to pack some floss if you bring this on the road!
